        By now you should all know about my love affair with Lucky Leaf Pie Fillings!  I have had so many wonderful opportunities working with this amazing company over the past year.  I can truly tell you this is a family owned and operated company that takes every bit of care of their products from seedlings/orchards to the factory to the grocery store and your home.  Being that it's that time of year again - The Holiday Baking Season, I of course have a new recipe for you!!


        As I am always saying, I love baking for my family and with my children!  Now I usually create a lot of pies around this time of year but I really wanted to try something different this time around with my Lucky Leaf fillings.  So I came up with my own recipe - Peaches 'n' Cream Oatmeal Cookies!

Ingredients Needed:
1 cup Butter 1 tsp Cinnamon
2 cup Brown Sugar 1 tsp Nutmeg
2 Eggs 1-2 cups White Chocolate
1 1/3 cup Flour Chips (depending on how
1/2 tsp Salt much you like)
1 tsp Amaretto/Cherry Extract 3 cups Oatmeal
1 can Lucky Leaf Peach Pie Filling
Optional 1/2 cup nuts

        Mix butter, sugar, amaretto, eggs, flour, salt, and spices together until well combined (low speed in a mixer).  Add Lucky Leaf Pie Filling and continue to mix.  Finally add chocolate, oatmeal and optional nuts.  Spoon out cookies onto baking sheet.  Cook 18-20 minutes @375 or until cookies begin to golden.  Makes 2 dozen.

        Wow!  I just love how well the Lucky Leaf fillings compliment just about any recipe.  These tasted as if I had cut up my own fresh peaches into the cookies.  It was as if we were eating homemade peaches and cream oatmeal right out of the oven!  I am never disappointed that's for sure!  I have to say too I am in love with my new warming tote from Lucky Leaf to use when I transport my pies and other baked goods from my home to my mothers throughout this holiday season!

Recommendation:  Yum yum...if these were available at more stores near me I'd be buying them every time I need to cook as should you if they are available near you.  I just can't brag enough not only in the reviews of their products but in my other product reviews how in love I am with these pie fillings!
