This past week we have been spending tons of time by the pool since we finally have decent weather here in Michigan. So with knowing we were going to have another yummy shipment of Lucky Leaf coming in the door we started pre-planning all of our fun menu options. Of course we could go with the pie filling Popsicles like we did last Summer but we were thinking more along the lines of something more substantial for this one.
After much discussion between me and the kiddos, we settled on some good ole fashioned pineapple upside down cake of course with all the extra greatness of Lucky Leaf. This recipe was so simple that Alana (15 y.o.) made it herself for everyone!
Grab yourself the following:
2 - Cans Lucky Leaf Cherry Pie Filling
1 - Can Sliced Pineapple Rings
1 - Box of Yellow or White Cake Mix
*Follow cake directions for extra ingredients
- First spray your pan/dish with oil, then spread the pineapple rings across the bottom.
- Next evenly spread your (2) cans of Lucky Leaf Cherry filling over the pineapples
- After following the cake mix directions to properly mix, pour over the fruit
- Toss in the oven on the bottom rack @350 for 35 minutes or until a toothpick comes out clean.
- Flip pan over immediately after pulling from oven onto a sheet tray and as it cools it will slide out perfectly
WOW! Not only is this one best warm and goey, but it makes a huge cake sure to feed at least 12+ people. We felt this Hawaiian treat was perfect for the kiddos to munch on after lunch each day! Everyone loved this and it honestly only made it about 24 hours in our house!
This company is just always coming up with new creations and recipes with ideas of how to use your Lucky Leaf Pie Filling in a unique way. Plus each recipe is so darn awesome that you can easily make it no matter what your skill level and seem like a pro to those who taste it. Recommendation: Yum yum...if these were available at more stores near me I'd be buying them every time I need to cook as should you if they are available near you. I just can't brag enough not only in the reviews of their products but in my other product reviews how in love I am with these pie fillings!
