Lucky Leaf Cranberry Apple Fritter Recipe and #Giveaway

        Not only do I look forward to the holidays for the obvious reasons, I know I can count on my baking AND cooking to be a little bit easier with Lucky Leaf Pie Fillings!  I look forward to baking for and with my family and especially now that I have children obsessed with sweets!


        You all know about my love affair with Lucky Leaf Pie Fillings!  I have had so many wonderful opportunities working with this amazing company over the past year and a half.  I can truly tell you this is a family owned and operated company that takes every bit of care of their products from seedlings/orchards to the factory to the grocery store and your home.

        I have to be honest, this last package I received I was both pumped to open yet confused.  Even as an avid baker, I had no idea what the heck a pie bird was and it took me a second to figure out what I was supposed to do with it.  However I was super excited to try out their limited edition Apple Cranberry filling.

        We actually debated over what to make with this one since it came with an awesome looking apple cranberry stuffing recipe.  However, we happen to have on hand a beignet recipe which we thought could make for a tasty breakfast one morning.  This past weekend we decided to experiment!

Grab yourself the following:
1 - Can Lucky Leaf Apple Cranberry Filling
5 - Tablespoons cooking oil
1 - Bag Beignet Mix
*If you do not have a mix I suggest looking up a recipe which usually consists of flour, eggs, sugar, etc.

First pour your beignet mix into a bowl.
Next dust a plate or surface with flour.
Slowly begin to heat oil in a skillet.
Then pour your can of Lucky Leaf filling into the bowl in place of the water in the instructions and mix until lumpy and sticky.
With hands or spoon scoop about 2 tablespoons worth of dough and place on the floured surface.
Flatten balls and flip to cover with more flour.
Then place pastry pancakes into the oil and cook until golden brown.  Flip after a few minutes to evenly cook other side.
When golden remove and place on a paper towel to remove excess oil.
Dust with powdered sugar and serve. *As you can see I was out of powdered sugar so we used granulated sugar which tasted great too (Alana even used cinnamon and sugar mixed)
Makes 1 dozen.

        These fruit filled fritters or beignets tasted amazing when warm!  We didn't have any left within 10 minutes of cooking them in our household but they make for a tasty pastry for breakfast or an after dinner snack perhaps with some coffee!

Recommendation:  Yum yum...if these were available at more stores near me I'd be buying them every time I need to cook as should you if they are available near you.  I just can't brag enough not only in the reviews of their products but in my other product reviews how in love I am with these pie fillings!
